Marinate prawn tartar with Bargalló Olive Oil

Wild garlic glazed with Bargalló olive oil

Basil ice cream

Glaze the prawns, some basil flowers, coarse salt and black pepper with the olive oil for a few minutes.
Chop the avocado and glazed wild garlic into small dice.
Assemble the dish with an avocado base and the garlic on top, followed by the prawns. Add a little soy sauce and a spot of the oil from the marinade.
Accompany it with basil ice cream and a little coarse salt on top.
