Tuna tartar with avocado and chili oil

It serves 4 people
400 g of fresh tuna
2 avocados
100 g of red pepper
20 g of baby cucumbers with vinegar
20 g of capers
salt and white pepper
chili oil
Dice the fresh tuna into half centimetre pieces. Peel and chop the avocados.
Guacamole: In a bowl, add the avocado, the pepper, the cucumbers and the capers, all finely chopped. Stir with a fork into a smooth paste.
In another bowl add the tuna; emulsion with the chili oil, salt and white pepper.


On a flat plate, place a circle around 6 cm in diameter and 4 cm high and fill to half with the guacamole. Press with a spoon and add the tuna.
Sprinkle with a little chili oil and decorate with parsley or chopped spring onion.
